Fetta (meaning ‘slice’ in Greek) grew out of necessity. It gave shepherds a way to preserve their milk. Traditionally made with sheep milk, or a mixture of sheep and goats’ milk. Australian Fetta is usually made with cows’ milk. It is milder than imported varieties, crumbles less and therefore is much easier to handle.
